Carmelized Onion, Walnut and Cilantro Chicken Salad

Thanks for putting this together Em! I'm really excited because I love new recipes. This is one that I found recently from http://thesistersdish.blogspot.com/. I took it for lunch last week and loved the lime and cilantro flavor.

Caramelized Onion, Walnut and Cilantro Chicken Salad
1 Tbs. butter
1 C. chopped sweet onion (you may want to use a little less, I thought it was pretty strong with a full cup)
2 C. cooked shredded chicken
1/2 C. coarsely chopped walnuts, toasted
1/4 C. sliced green onion (about 2)
1/2 C. mayonnaise
1 Tbs. snipped fresh cilantro
1 Tbs. lime juice (or a little more, I really liked the lime and used one whole lime)
salt and pepper
sliced tomato
baby spinach

In large skillet, melt butter over medium low heat. Add onion, cook covered 13-15 minutes stirring occasionally. Uncover; cook and stir over medium high heat for 3-5 minutes until golden. In large bowl combine onion, chicken, walnuts, and green onion. Add mayonnaise, cilantro, and lime juice. Toss to coat. Season to taste with salt and pepper. Place on toasted bread with tomato and spinach.

Recipe Blogs

So, I finally created a recipe blog and added all of you as an author. Feel free to post recipes that you like. I love new recipes so I thought that this would be a fun site for us to share our new recipes with each other very easily. Enjoy posting. Emilee

Zucchini Bread

I got this recipe from my neighbor. It is so good if you are looking for a way to use Zucchini.

3 eggs
1 c. oil (or substitute applesauce)
2 c. zucchini
1 tsp. salt
2 tsp. cinnamon
3 tsp. vanilla
1/2 c. nuts (optional)
1/4 tsp. baking powder
1 tsp. soda
3 c. flour

beat the eggs; add oil, sugar, zucchini, & vanilla. Add dry ingredients then add nuts (if you want to). grease the pans then pour into 2- 9x5 loaf pans or 4 mini loaf pans. bake at 325 degrees for 45 minutes - 1 hour for the mini loafs and a little longer for the bigger pans.
