Thanks for putting this together Em! I'm really excited because I love new recipes. This is one that I found recently from http://thesistersdish.blogspot.com/. I took it for lunch last week and loved the lime and cilantro flavor.
Caramelized Onion, Walnut and Cilantro Chicken Salad
1 Tbs. butter
1 C. chopped sweet onion (you may want to use a little less, I thought it was pretty strong with a full cup)
2 C. cooked shredded chicken
1/2 C. coarsely chopped walnuts, toasted
1/4 C. sliced green onion (about 2)
1/2 C. mayonnaise
1 Tbs. snipped fresh cilantro
1 Tbs. lime juice (or a little more, I really liked the lime and used one whole lime)
salt and pepper
sliced tomato
baby spinach
In large skillet, melt butter over medium low heat. Add onion, cook covered 13-15 minutes stirring occasionally. Uncover; cook and stir over medium high heat for 3-5 minutes until golden. In large bowl combine onion, chicken, walnuts, and green onion. Add mayonnaise, cilantro, and lime juice. Toss to coat. Season to taste with salt and pepper. Place on toasted bread with tomato and spinach.
